I’d like to think I know a thing or two about chocolate by now, I’ve eaten my fair share of it. For me, theres a huge difference between good quality chocolate and supermarket bought chocolate.
I discovered Rococo Chocolates about a year ago and have been a loyal customer ever since. Theres just something special about Rococos and Annie, manager of the Chester store, told me why.
Q. When did you first hear about rococo chocolates and why did you want to become involved?
My sister first introduced me to Rococo Chocolates about 10 years ago as she was living in London. She used to buy me Rococo drinking chocolate in the distinctive blue and white drum. I loved it.
I had worked for the Grosvenor Hotel for 10 years previously but had left to go and work in Italy. Mr Slater the Hotels M.D. heard that I had returned to Chester and introduced me to Chantal and James, Rococos founder and owners. I applied for the job, was interviewed and was lucky enough to be offered the position. I remember telling a good friend before that I really wanted the job. I was delighted.
Q. What makes rococo’s chocolates stand out from other brands?
Rococo chocolates believe in Pleasure and Provenance.
We source the highest quality, authentic, healthy ingredients (eg a big NO to artificial vanilla and hydrogenated vegetable fat) and fashion them into delicate deliciously flavoured chocolates.
We source fairly and are incredibly proud of our latest venture Grococo, our “home farm” that supplies its entire harvest of organic Trinitario cocoa beans to make the fine chocolate that is our house blend.
Q. What is your most popular chocolate?
In Chester the most popular chocolates are the fresh ganache selection from our beautiful chocolate cabinet. The Anglesey Sea Salt Caramel Ganache is our most popular followed by the Popping Marc de Champagne.
Q. Who decides on the flavours and ideas?
That is a collaberation between Barry Johnson our head chocolatier and Chantal Coady Founder, Owner and Creative Director of Rococo. Flavours are influenced by the seasons.
Q. Do you have any plans for more shops?
Who knows. Rococo in Chester is now 2 years old. Our fresh ganache are hand made so we are somewhat limited by the size of our kitchen in London. As a company Rococo has always grown organically so as not to jeopordise quality.
Q. Whats your favourite chocolate?
It may sound silly but it depends how I feel day by day. I love the fresh ganache, they are fruity and floral without being overly sweet. I love the Grenadan dark chocolate bars and we have so many flavours of Artisan bars I could have a different favourite daily.
Q. Do you hold any events?
Yes. We hold bespoke chocolate tastings here in the shop in Chester. They have proved to be very popular in the past. They are tailor made to suit each clients requirements. Our head chocolatier has held an evening event where he explained how new chocolates were created from initial concept to the finished product.
